The shito is coming back in the new year.
Everyone who bought my shito came back for more. People told me they could taste every part of it: the ginger, the garlic, the kick of scotch bonnet, the richness of dried herring and the sweetness of prawns. Nothing watered down, no shortcuts. I've been working on a new recipe, and I can't wait for you to try it. Join the waitlist and you'll be the first to get a jar.
My foundation is Ghanaian. I grew up loving the soups and stews of Cape Coast, where ingredients build on each other in layers, not shortcuts.
My mum had a catering background and taught me the basics when we moved to London. The rest I learned by getting it wrong, paying attention, and refusing to accept average food. Twenty years on, over a thousand people have eaten my cooking, at family tables, supper clubs and private events.
Pinch of West Africa is where I share it with you.
