Crispy Fried Yam
A Classic West African Favourite
Crispy Fried Yam is the ultimate comfort food and a staple across many West African homes. This simple dish pairs perfectly with spicy sauces, grilled meats, or just as a snack on its own. Made with yam, lightly seasoned, and fried to golden perfection, it’s crispy on the outside and soft on the inside—absolutely irresistible!
Ingredients:
Yam
Salt
Brown Sugar (optional)
Black Pepper
Smoked Paprika
Groundnut Oil (or oil of your choice)
Rosemary
Fresh Thyme
Instructions:
1. Prepare the Yam:
Peel and cut the yam into chips.
Rinse and soak them in a brine made with cold water, a pinch of salt, and optionally a pinch of brown sugar for 20-30 minutes to enhance flavour and texture.
2. Infuse the Oil:
In a frying pan, heat groundnut oil over medium heat.
Add fresh rosemary, thyme, and a few slices of onion to infuse the oil with aromatic flavours.
3. Fry to Perfection:
Remove the yam chips from the brine and pat them dry with a kitchen towel.
Fry in the infused oil over medium to low heat for 10-12 minutes or until golden and crispy.
4. Season and Spice:
While the yam is still hot, sprinkle with salt, black pepper, and smoked paprika for a burst of flavour.
5. Dip and Delight:
Serve your crispy yam chips with a dipping sauce of your choice, such as tomato sauce, Sriracha, mayonnaise, or traditional shito.
Tips:
The pinch of brown sugar in the brine is optional but can add a subtle caramelised flavour to the yam.
For a spicier version, add a sprinkle of chili powder/flakes before serving.
